  • 8 cups (1.9L) chicken broth
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion
  • 2 to 3 stacks of celery
  • 2 garlic cloves
  • 1 can (14.5onz) canned tomatoes
  • ½ cup cilantro (chopped)
  • 2 cups (350g) chicken (cooked and diced)

  1. The first step on how to make spanish chicken soup is pretty simple! You just have to grab a large pot, where you usually make soup on, and add butter and oil, then heat it on a medium to high heat until the butter melts.
  2. When the butter melts add chopped onions and celery, you can chop it on any shape or size that you want. You have to cook and stir it frequently because otherwise, the onion might get brown and overcooked. When that’s ready add garlic and cook for one more minute.
  3. Then add the canned and peeled tomatoes and cilantro, cook for 3 more minutes and with a spoon break the tomatoes. You can also blend the tomatoes on a food processor and add them as a sauce instead of breaking them with a spoon, anyway will work!
