This creamy Spanish tomato soup is a very popular dish in Andalusia and had its origins in the 19th century in the province of Cordoba.
This creamy tomato soup recipe was very popular especially in the lower and middle classes of Andalusia since it is a dish that only needs ingredients that are easy to find and inexpensive.
In the beginning, this soup had a white color since tomato was not a common ingredient, but in the last century a recipe with tomato began to be implemented and it was a success.

Things You’ll Need to Make Creamy Spanish Tomato Soup
Thankfully this is an easy homemade tomato soup recipe, so the necessary equipment and ingredients are generally found in every home.
The only essential equipment for this recipe is a blender or a mixer since they will take the time to process the tomato with the ingredients much easier.
A few decades ago when these appliances did not exist or were not in every house, and people just skipped the step of mixing everything in a blender, and just left the tomato pieces on display.
If you can use a food processor or blender, do it! since the texture is much more pleasant.
Ingredients
- 1 garlic clove
- 2 pounds (1kg) ripe tomatoes (chopped)
- ¼ Cup (50g) flour
- 2 ½ Cups (600ml)milk
- ¼ Cup (60g) butter
- 3 tablespoons tomato paste
- 2 tablespoons sugar
- 1 teaspoon basil optional.
- 2 ounces (55g) Serrano ham (for topping)
- Salt to taste
How to make Creamy Spanish Tomato Soup – Step by Step Guide
- To start with this easy tomato soup recipe, the first thing you need to do is to melt butter In a large pot at medium heat. Do it carefully so the butter doesn’t burn. When it’s ready add garlic and cook until golden, for about one minute. Then pour the flour and combine everything together, mix well so you won’t get any flour lumps on your soup.
- For the next step add sugar, basil, salt, and any other spice of your choice. Keep cooking at medium heat and mixing for one more minute, to enhance the flavors.
- After that add milk and stir making sure that there isn’t any flour lump on the soup. Cook and slowly whisk at medium heat until it thickens, it should reach a creamy consistency.
- Then add chopped fresh tomatoes and tomato paste and mix everything together. Keep it at medium heat for 5 to 7 more minutes so the tomato flavor reaches the whole soup.
- As an optional step, you can blend everything on a food processor or blender to get a smoother texture, this way the tomatoes won’t be visible but the flavor will be there! And with this step your soup is ready! Serve it warm and top with some chopped serrano ham.
Substitution of ingredients
There are many ingredients that can be replaced, and you can even make a hybrid between this recipe and the Gazpacho soup recipe.
For example, there is a Gazpacho recipe with canned tomatoes, so you can take the canned tomatoes from that recipe, and use them on this one.
The result will be pretty similar, and they are really great if you don’t have fresh tomatoes in your home, but I always recommend making fresh tomato soup recipes, since you can really feel the difference in the flavor.
You can also make a Hybrid between this soup and the Spanish lentil soup and Spanish bean soup, you just need to add some cooked lentils or beans into the recipe.
Those ingredients blend really well with the flavor of the creamy tomato soup, they’ll give more texture, and they make this soup a more complete food.
This recipe can also be changed according to the diets of the guests, if they are vegan you just need to use any type of vegan milk and butter, (use the same amounts as the ones on this recipe) and you’ll have a creamy vegan tomato soup.
This is the best homemade tomato soup recipe and it is wonderful as it is, so I recommend you to use the listed ingredients if you can.

Tips on Serving Spanish Tomato Soup
This soup is eaten as a main dish, as its creamy consistency makes it filling and you won’t be left hungry at all.
In Andalusia, it is eaten both for dinner and lunch, and it is very popular in winter and autumn days as it is very warm and the taste of fresh tomato is addictive.
It is generally served with cubes or slices of ham closed on top, which helps make you completely full and also adds more flavor.
If you want you can also add grated Parmesan cheese as it is a flavor that combines very well with the other ingredients.
How to Store Tomato Soup
You can store this creamy tomato soup for up to 3 days in the fridge. Something good about this soup is that it does not lose its taste, and all you have to do is heat it on the stove or in the microwave for a couple of minutes.
You can also freeze this soup, it will last up to 30 days in the freezer. What you should do is take it out of there and put it in the refrigerator overnight before eating it.
This is very important since letting the soup (or any other food of this type) outside of the fridge can contaminate it with any type of bacteria, so make sure you have enough time for it to thaw in the refrigerator.
