As Andalusians became experts in this classic recipe, they created different Spanish soup recipes to incorporate new ingredients and flavors, and that’s how fish noodle soup was born.

This dish has all the goodness of the traditional fish soup recipe, but it also incorporates delicious thin noodles to make this dish more filling and have all the necessary ingredients for a good diet.

Things You’ll Need for Fish Noodle Soup

To make this recipe for Spanish soup, you will need white meat fish, carrot, onion, garlic cloves, potato, fish or vegetable broth, and thin noodles as the main ingredients.

Ingredients

  • 400g white fish filets (such as cod or haddock)
  • 6 cups (1.5l) fish or vegetable broth
  • 1 package (200gr to 250gr) of angel hair pasta 
  • 1 onion
  • 2 garlic cloves
  • 1 ripe tomato
  • 1 green bell pepper
  • 1 carrot
  • 1 potato
  • 2 tablespoons olive oil
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley (for garnish)
  • Lemon wedges (optional, for serving)

How to Make Fish Noodle Soup – Step by Step Guide

  1. For the first step in this fish noodle soup recipe, peel and chop the onion and carrot into small squares. Peel and cut the potato into bite-sized cubes, also peel and mince the garlic cloves.
  1. After that, heat the olive oil in a large pot over medium heat. Also, add the chopped onion and garlic, and sauté until they turn translucent.
  1. Then, add the diced tomato, bell pepper, carrot, and potato to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
  1. Meanwhile, it is time to prepare the fish. For that, pat the filets dry with kitchen paper, and clean them removing any scale, bone, or skin that may be left. Cut it into bite-sized pieces.
  1. Now, pour in the fish or vegetable broth and add the bay leaf and paprika. Season with salt and pepper to taste. Bring the easy fish soup to a simmer and cook for about 15 minutes until the vegetables are tender.
