To make the papas arrugadas recipe you just need small potatoes (white or Yukon gold), coarse salt, and water.

  • 1kg small potatoes (white or Yukon gold)
  • 1/2 cup (140g) coarse salt
  • Water (to cover the potatoes)

How to Make Papas Arrugadas Recipe – Step by Step Guide

  1. To start making the Spanish potatoes recipe you have to wash the potatoes very well. Keep in mind that you are going to eat them with their skin on, so you have to remove any type of dirt.
  1. Now place the potatoes in a pot making sure it isn’t too crowded, and also add the coarse salt.
  1. Cover the potatoes with water, but just enough, don’t let there be extra water.
  1. After that, cook over medium heat for 20 minutes.
  1. When that time goes by, pinch the potatoes with the help of a fork and once they are tender, you can remove them from the heat. If they aren’t done yet, then continue cooking and check every 5 minutes.
  1. Once tender, drain the water from the pot and put the potatoes back on the heat, shaking the pot and sautéing so that the potatoes dry out and get that wrinkled appearance. 
  1. Then, remove the wrinkly potatoes from the heat and let them rest covered for a few minutes with a clean cloth.
  1. Now you just have to serve the Spanish potatoes while hot along with your favorite sauce or on their own.

  3. Cover them with water, but just enough, don't let there be extra water.

Notes

The whitish tone on the shriveled potatoes is completely normal, it happens due to the crystallizing salt that has adhered to the skin.

You only need coarse salt as the seasoning for this Spanish potato recipe, but you could add other spices such as paprika, turmeric, black ground pepper, or anything you like.
