The Spanish mojo sauce was created in the Canary Islands in the 16th century. Green mojo (mojo verde), red mojo (mojo rojo), and spicy red mojo (mojo picón) are the main varieties of mojo.

The recipe was the product of the commercial exchange that this region had with the North of Africa and some Latin American countries, making it an authentic cultural mix.

Of course, it has the Spanish signature as a large amount of garlic and olive oil are used in the recipe, giving it an undeniable Spanish character.

To make the Spanish mojo sauce you will need fresh coriander, garlic, oil, vinegar, and seasonings.

It is easier to make the green mojo with the help of a blender, but you can do it by hand with a mortar and pestle.

  • 1 bunch (about 80 to 100 gr) of fresh coriander
  • 5 garlic cloves
  • 1 teaspoon cumin seeds
  • 5 tablespoons vinegar
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder (optional)

  1. To start making this mojo recipe you have to separate the coriander leaves from the stems. Wash the leaves with plenty of water, then drain them.
  1. After that, peel and chop the garlic cloves (this will make it easier to grind them).
  1. Now grab a blender and put the chopped garlic, coriander, salt, pepper, cumin, and vinegar. You can do this with a mortar and pestle if you prefer to do the mojo sauce by hand.
  1. Then add a little olive oil and start blending while you continue incorporating all the oil and mix it with the rest of the ingredients.
  1. Once you get a sauce-like consistency, the mojo verde is ready. It isn’t always a homogeneous mixture, since you usually can distinguish bits of garlic or coriander, but it is perfect like this.

For example, you can use coarse salt or black ground pepper for the mojo seasoning.

Instead of vinegar, you can use the same amount of lime or lemon juice (it isn’t in the classic Spanish mojo sauce recipe but you can make that change).

If you want it to be more similar to other Spanish hot sauces, just add one or two green chili peppers to the mix.

The Spanish mojo sauce can last up to a week in the fridge and up to six months in the freezer.

If you use fresh ingredients and keep it in an airtight container, the Spanish green sauce can last up to a week in the fridge, but if the ingredients aren’t that fresh it is recommended to store it for only 3 days.

If you want to freeze the green Spanish sauce, you must take it to a freezer-safe container and label it with the date (it can be stored for up to six months).

When you are ready to use the garlic mojo, you should thaw it in the fridge for several hours before using it.
