  • 3 whole mackerel (about 1 to 1.5 pounds each), gutted and scaled
  • 3 tablespoons olive oil
  • 1 cup (150gr) cherry tomatoes
  • 1 onion
  • 3 cloves of garlic
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley, for garnish

  1. Now peel and chop the onion into thin slices. Peel and mince the garlic cloves. Remove the guts and scales from the whole mackerel (or ask your fishmonger to clean it for you).
