To make Spanish grilled chicken the only ingredient you can’t replace is chicken (although you can use different parts of it), so you don’t need much more than that to make it, or fancy equipment.

  • 1 whole chicken
  • 1/2 cup (120ml) olive oil
  • 2 lemons
  • 2 tablespoons chopped fresh oregano
  • 3 garlic cloves
  • 2 onions
  • 2 peppers (red, green, the ones you like the most)
  • Salt and pepper to taste
  • 1/2 cup (120ml) water

  1. To start making this pollo Asado recipe, you have to preheat the oven to 180° and put the chicken in a baking dish.
  1. Mince the garlic cloves and chop the fresh parsley. Grab a small bowl and put the oil, the minced garlic, and the parsley, and squeeze one of the lemons.
  1. Then use the previous mixture to coat the chicken with it. You can help yourself with a kitchen brush or do it with your hands.
  1. After that, let the Spanish grilled chicken rest for a couple of minutes. In the meantime cut the onion and peppers and put them around the chicken. They will give it flavor and you can also eat them with the chicken.
  1. Take the tray to the oven and cook the chicken for 60 minutes at 180°C. Meanwhile, cut the lemon into slices, remove the chicken from the oven, put the pieces on top, and cook for about 30 minutes.

You can also choose to keep this Spanish chicken in the freezer. You also have to let it come to room temperature, and then cover it to freeze it. We recommend cutting it into portions to make it easier for you to store in the freezer.

If you choose to freeze it, you must let it thaw the night before you eat it in the fridge. If you keep it in the fridge you can put it in the oven right away (removing the plastic wrap, of course).

Notes

As you can see, this grilled Spanish chicken is very easy to make in the oven, but you could also cook it on a grill.

You could even turn it into a slow-roasted chicken recipe, you just have to cook it in the oven for at least 2 hours.

This prior cooking method will make your roast chicken taste deeper and the meat will come off the bone more easily.
