How to Make Pork And Potato Soup – Step by Step Guide

frying onion in a pan for the pork and potato soup
  1. For the first step in this Spanish potato soup recipe, you have to prepare the veggies. For that, wash, peel, and cut the potatoes into bite-sized squares. Peel and chop the onion into small pieces and mince the garlic cloves. Set them aside.
  1. After that, pat the pork loin dry with kitchen paper, and remove any inedible parts or excess fat. Cut it into cubes and set aside.
  1. Then, heat olive oil in a large pot over medium-high heat. Add the pork cubes and sear them on all sides. Once the pork gets a golden color, remove the pork from the pot and set aside.
  1. Still using the same pot (to take advantage of that leftover pork fat and olive oil), add diced onion and minced garlic. Saute until the onions are translucent and fragrant.
  1. To continue with this pork soup recipe, add diced potatoes to the pot along with dried thyme and rosemary. Stir to combine and cook for a few minutes until the potatoes start to soften slightly.
  1. Now, return the seared pork to the pot. Pour in the chicken or vegetable broth. Season the pork and potato soup with salt and pepper according to your taste.
  1. You can now bring the potato and pork soup to a simmer and let it cook for about 25 minutes or until the potatoes are tender and the pork is fully cooked through.
  1. After the potatoes get a tender texture, stir in the heavy cream. Let the Spanish potato soup simmer for another 5 minutes to heat through.
  1. To finish this Spanish soup recipe, do a taste test and adjust the seasoning if needed. Now, serve the pork and potato soup hot, optionally garnished with freshly chopped parsley.
