  • 1 watermelon
  • 1 apple
  • 1 cucumber
  • 1 green bell pepper
  • 1 cup (240ml) cold water
  • 1 red onion
  • 1 garlic clove
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 tablespoon fresh lemon juice
  • Salt and pepper (to taste)

How to Make Gazpacho Without Tomatoes – Step by Step Guide

  1. The first step on this Andalusian gazpacho recipe is to peel and chop the watermelon, and remove (and discard) as many seeds as you can. Peel and chop the apple, and remove the core and seeds (discard them).
  1. Now, peel and cut the cucumber. Chop the bell pepper, remove and discard the seeds. Also, peel and chop the onion, and do the same with the garlic clove.
  1. Then grab a blender or food processor, combine the chopped watermelon, cucumber, green bell pepper, red onion, and minced garlic.
  1. After that, blend the fruits and vegetables until you get a smooth consistency and everything is well combined.
  1. For the next step, add the olive oil,  sherry vinegar, lemon juice, salt, and black pepper to the blender. Blend again until all the ingredients are thoroughly mixed.
  1. If the gazpacho is too thick, you can add chilled water in small amounts until you achieve your desired consistency and blend again after each addition. If it is too liquid then add one slice of stale bread.
  1. Now taste the Andalusian soup and add more salt, pepper, or vinegar if needed.
  1. Then take the gazpacho to a large bowl, cover it with a lid or plastic wrap, and refrigerate for at least 2 hours (or longer) to cool.
  1. After that time, give the homemade gazpacho a good stir. If it has thickened too much in the fridge, you can add a bit more chilled water and mix well.

Notes

If you want this to be a chunky gazpacho recipe you just have to cut some extra pieces of the vegetables and the watermelon (or apple) and add them right before serving.

This Spanish soup is served cold, but you can speed up the cooling process by chilling it in the freezer for 45 minutes.

To spice things up on this chilled Spanish soup you can add 1/2 teaspoon of chili flakes, or 1 teaspoon smoked paprika (using jalapeño pepper will work too).
