To make the chorizo croquettes you will need milk, flour, egg, breadcrumbs, onion, Spanish chorizo, and seasoning.

  • 4 1/4 cups (1l) milk
  • 120g chorizo
  • ½ cup + 2 tbsp (100gr) flour
  • 1/2 cup (100 gr) butter
  • 1 onion
  • Salt and pepper to taste
  • 1/2 teaspoon Nutmeg (optional)
  • For the coating:
  • 1 cup (120gr) Breadcrumbs
  • 3 eggs
  • oil for frying

  1. To start making this croquettes recipe you have to chop the onion into small pieces and fry it in a pan with the butter.
  1. After that, chop the Spanish chorizo into small squares and add it to the pan. When it gets more color, add the flour and mix.
  1. Now stir until it starts to cook and add the milk little by little while constantly stirring. Then add salt, pepper, and nutmeg (optional).
  1. Once the mixture thickens (you should be able to pull it away from the sides of the pan), place it on a tray to cool. Put plastic wrap in contact with the mix so that it doesn’t form a crust, and store it in the fridge for a couple of hours until it is firm.
