  • 1kg cherry tomatoes
  • 2 slices of stale bread
  • 1 garlic clove
  • 1 white onion
  • 1 cup (240ml) water 
  • 1 red bell pepper
  • 1 green bell pepper
  • 5 tablespoons olive oil
  • 2 tablespoons vinegar
  • Salt and pepper to taste

How to Make Cherry Tomato Soup – Step by Step Guide

  1. The first step is to wash the cherry tomatoes and cut them into halves.  If you prefer a smoother texture, you can also peel the tomatoes by blanching them in boiling water for a few seconds and then transferring them to an ice bath.
  1. After that, peel and chop the onion and the bell peppers (discarding the seeds). Also, peel and mince the garlic clove.
  1. Now grab a large bowl, place the stale bread, broken into smaller pieces, and cover it with a cup of water. Let it soak for a couple of minutes until the bread softens. Drain the excess water from the bread by squeezing it gently.
  1. With the help of a blender or food processor, combine the soaked bread, bell peppers, onion, garlic clove, and cherry tomatoes. Blend until you get a smooth puree.
  1. Then continue blending and slowly drizzle in the olive oil and red wine vinegar. Blend until all the ingredients are well combined and you reach the classic cherry tomato gazpacho consistency.
  1. For the next step in this cherry tomato soup recipe, taste it and add salt and pepper to your preference. Then transfer it to a large bowl, cover, and refrigerate for at least 2 hours to cool.

Notes

If you can't eat bread (or don't have it at home), then you can make this cherry tomato soup without it, just be careful with the amount of water that you add.

To add more creaminess in that case, you can blend in 1/2 cup of heavy cream to your gazpacho with cherry tomatoes.

You can add more spices to your tomato cherry gazpacho recipe, like chili flakes, paprika, or even a few tablespoons of hot sauce.
