Background of the Dish

Some records demonstrate that Andalusian recipes with oxtail have existed since the 1600s, and one thing they all had in common, from the tender oxtail recipe to the classic stew, is that they used a blend of wine with oxtail broth recipe.

This led to the famous red wine oxtail stew quickly rising to the top, but there were still many people who remained unconvinced of the combination, either because they preferred to avoid alcohol or because they didn’t have it at home.

This is how the oxtail recipe without wine was born as the perfect alternative, adding other spices and vegetables that help replace the lack of the wine’s flavor, making its absence hardly noticeable.

  1. After that, pat the oxtail dry with kitchen paper, cut it into bite-sized pieces, and season with salt and pepper.
  1. To continue with this oxtail stew recipe, heat the olive oil in a large, heavy pot or Dutch oven over medium-high heat. Then, add the oxtail pieces and sear them on all sides until golden, remove and set aside.
  1. Using the same pot, add the chopped onion and cook until it becomes translucent. Then add the minced garlic and cook for an additional minute.
  1. Now stir in the diced carrots, tomatoes, red and green bell peppers. Cook for up to 7 minutes until the vegetables start to soften.

Substitution of Ingredients

Making this oxtail recipe without wine is super simple and the best part is that there are a few ingredient replacements that you can follow.

For example, you can prepare this oxtail without wine recipe with any type of vegetable of your choice, such as potatoes, leeks, celery, sweet potatoes, pumpkin, etc.

This recipe has a lot of spices to replace the wine, but if you want a different flavor profile you can add 1 cup of tomato sauce or a couple of tablespoons of tomato paste, and it will have a taste similar to tomato oxtail soup.

You can turn it into a slow cooker oxtail if you add one more cup of broth to the ingredients and prepare everything in your slow cooker, where it would take from 6 to 8 hours depending on the settings.

If you don’t want it to have a stew-like consistency, then you can prepare it like an oxtail recipe in the oven (such as the roasted oxtail or the braised oxtail) using the same ingredients as the ones listed here.

Tips on Serving Oxtail Recipe Without Wine

With this oxtail recipe without wine, you will have a fantastic main dish ready to be served at lunch or dinner, perfect for cold winter or fall days.

To enhance the flavors of this oxtails stew recipe, you can top it with grated manchego or parmesan cheese, as it will melt and add creaminess and a cheesy flavor to the dish.

You can do like the oxtail stew with potatoes and serve this dish with a side of cooked vegetables, or take inspiration from the oxtail noodle soup and serve a smaller portion of the meat with your favorite type of pasta or rice.

Give a go to our slow cooker oxtail recipe, the delicious oxtail spaghetti, or the flavorful curry oxtail recipe.

Lastly, since this stew won’t have the depth that is given by the red wine, you can do like the Mexican oxtail soup and drizzle a bit of hot sauce or basil pesto sauce, for an extra kick.

How to Store Oxtail Recipe Without Wine

Once you finish making the oxtail recipe without wine you have to let it cool to room temperature if you are planning on storing it.

Then, take the stew to a covered airtight, and freezer-safe container, and you will be able to store it in the fridge for up to 3 days or in the freezer for up to 45 days.

You can label the container with the stew so you don’t go over that time, and if when you are reheating it the texture of flavor seems off, then it is best to avoid consuming it.

To make sure that it returns to the same consistency as when you finished making the oxtail recipe without red wine, you can add 1/2 to 1 cup of broth while reheating on the stove.
