  • 1.5kg oxtail
  • 2 tablespoons vegetable oil
  • 2 onions
  • 1 can (425gr ounces) diced tomatoes
  • 2 cups (480ml) beef broth
  • 1 cup (240ml) coconut milk
  • 2 potatoes
  • 4 garlic cloves
  • 1 tablespoon minced ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder 
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice (for serving)

How to Make Curry Oxtail Recipe – Step by Step Guide

  1. For the first step in this curry oxtail recipe, you have to prepare the veggies. For that, wash and cut the potatoes into bite-sized pieces (clean them properly as you’ll keep the peel on). Peel and mince the garlic cloves, and grate the ginger until you get one tablespoon. Peel and chop the onions. Set them aside.
  1. After that, pat the oxtail dry, trim the excess fat, and chop it into bite-sized pieces. Season each side with salt and pepper. 
  1. Now, grab a large pot or Dutch oven and heat the vegetable oil over medium-high heat. Add the oxtail pieces and sear them on all sides until they get a golden color. Remove it from the pot and set aside.
  1. Using the same pot, add more oil if needed and sauté the onions until they are soft and translucent, for about 5 minutes. Also, add minced garlic and ginger to the onions and cook for another minute until fragrant.

Coconut milk is the best one for this recipe for oxtail curry, but you could use whole milk, almond milk, oat milk, etc.
