  • 4 tomatoes (ripe)
  • 1 cucumber
  • 1 red onion
  • 1 green bell pepper
  • 1 clove garlic

How to Make Ensalada de Aguacate Recipe – Step by Step Guide

  1. To start making this cucumber tomato avocado salad recipe, you have to wash the tomatoes and cut them into thick slices (you can remove the seeds and peel them if you don’t like them). Place the tomato pieces on a large plate or salad bowl.
  1. Now, peel the avocados and cut them into slices or cubes. Add them to the salad bowl along with the tomatoes.
  1. After that, peel and cut the cucumber into round slices, also place it in the bowl. For this Spanish style salad, you can chop it into squares if you prefer.
  1. Then, peel the onion and cut it into thin slices. Also, cut the green bell pepper into thin slices (remove the seeds and discard them). Add both ingredients to the bowl.
  1. For the next step in this vegan avocado salad recipe, peel and mince the garlic clove.

Notes

You can add other spices to the cucumber tomato onion avocado salad, for example, paprika goes really well.

You can turn this into an avocado lime dressing if you replace the vinegar with 1 tablespoon of lime juice.

The cooling process is key to this Spanish summer salad, but you can serve it at room temperature during winter or fall.
