- 1 teaspoon paprika
- Salt and pepper to taste

- To get started with this Spanish sea bass recipe, you have to prepare the vegetables. Just wash and chop the garlic, bell pepper, and onion. Peel the tomatoes and cut them into small pieces, and set them aside.
- Now in a large frying pan, add a drizzle of extra virgin olive oil and, when hot, add the minced garlic, letting it golden. Then, add the onion and bell pepper to the pan with salt and pepper to taste.
- Once the onion starts getting transparent, remove the pan from the heat and put the sofrito in a large tray.
- In the same pan, with a little more extra virgin olive oil, fry the tomatoes. When they reach a soft texture, place them into the tray with the bell pepper, onion, and garlic.
- Place the sea bass on top of the vegetables, and pour the tablespoons of white wine. Keep in mind that the alcohol will evaporate so it won’t have a strong taste.
- With the oven preheated to 200°C, put the tray with the sea bass in and cook for 15 minutes.

If you want to speed up the cooking process you can make this a pan-seared fish.
Just use a sea bass fillet, sear it in a frying pan with a few tablespoons of olive oil, and then complete the cooking process in the oven for 15 to 20 minutes.
