  • 1 mango
  • 1 avocado
  • 1 head of romaine lettuce
  • 1 red bell pepper
  • 1 cucumber
  • 1 red onion
  • 1/2 cup (100gr) cherry tomatoes
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 garlic clove
  • Salt and pepper (to taste)

How to Make Chicken Mango Salad – Step by Step Guide

  1. To prepare the chicken mango salad, heat a pan with a little bit of olive oil over medium heat. Once it sizzles, add the chicken breasts (seasoned with salt and pepper) and cook for 8 minutes per side, or until fully cooked. Let them cool.
  1. Now, wash the romaine lettuce leaves and drain them, so that you don’t end up with a watery mango avocado chicken salad. Peel and mince the garlic clove. Also, cut the avocado in half, remove the pit, and slice it or cut it into small cubes.
  1. After that, cut the bell pepper in half, discard the seeds, and chop it into small squares. Wash and cut the cherry tomatoes in half and slice the cucumber. Lastly, peel and chop the onion into small squares or in julienne style.
  1. Then, wash the mango, pat it dry with kitchen paper so that it is easier to handle, and with a sharp knife, cut off the sides of the mango along the pit, and scoop the flesh out off the peel. Chop into small or bite-sized cubes.
