Background of the Dish

Andalusia is the home of the best oxtail recipes that you will find, and most of them were created in the early 1900s as the economic crisis caused by the Civil War affected a large part of the population.

Still, these recipes were sealed into Andalusians’ hearts, so you can find the original ones or alternatives with some modern twists in almost every restaurant in the region.

The keto oxtail recipe was born as a healthier alternative to the stew made with an oven baked oxtail recipe, but this one only uses low-carb ingredients and doesn’t call for wine.

How to Make Keto Oxtail Recipe – Step by Step Guide

garlic and fresh coriander for the keto oxtail recipe
  1. For the first step in this keto oxtail stew recipe, you have to preheat the oven to 180°C (356°F).
  1. After that, peel and chop the onion into small pieces. Peel and mince the garlic cloves, and chop the celery stalks into slices. Wash and chop the tomatoes into small cubes, discarding the seeds. Set them aside.
  1. Now, pat the oxtail dry with kitchen paper and trim the fat. Cut it into 2 inch pieces, and season with salt and pepper. For a regular oxtail recipe you can keep the fat, but just make sure that you balance that out with the rest of your diet.
  1. Then grab a large oven-safe pot or Dutch oven and heat the olive oil over medium-high heat. Sear the oxtail pieces on all sides until golden, then remove and set them aside.
  1. Using the same pot, add chopped onion, garlic, and celery. Sauté until the vegetables get a soft texture. Feel free to add other vegetables to this easy oxtail recipe, such as bell peppers.
  1. For the next step in this perfect oxtail recipe, pour in the chopped tomatoes and stir for a few minutes. You can use canned tomatoes if you prefer, but the fresh ones always hit the spot.
  1. Now, return the browned oxtails to the pot. Add homemade beef broth (to keep it a keto oxtail recipe), bay leaves, thyme, rosemary, paprika, cumin, coriander, cayenne pepper, salt, and pepper. Bring the mixture to a boil.
  1. To continue with this great oxtail recipe, cover the pot and transfer it to the preheated oven. Let it cook for about 1.5 to 2 hours or until the oxtails are tender. Discard the bay leaves, taste the stew, and adjust the seasoning if necessary. To make a quick oxtail recipe, do the cooking process in a pressure cooker.
  1. To finish the keto oxtail recipe you just have to serve the stew warm, optionally with chopped fresh herbs on top.

Substitution of Ingredients

We know that making changes to a recipe while you follow a keto diet can be intimidating, but we’ll give you a list of substitutions for this keto oxtail recipe so that you have nothing to worry about.

To add an extra kick of flavor to this oven oxtail recipe you can take inspiration from the Mexican oxtail soup and add a few tablespoons of keto-friendly hot sauce, or one bell pepper or jalapeño pepper.

To turn this into a keto oxtail soup recipe you would have to double the amount of broth and cook it in the stove instead of doing it in the oven, but it would take a similar amount of time.

For a creamier finish result on this carnivore oxtail recipe, you can add a few tablespoons of full-fat cream cheese to ensure it aligns with the high-fat and low-carb principles of a keto diet.

Then you can take the dish from this beef oxtail recipe and store it in the fridge for up to 3 days, or in the freezer where it can last up to 45 days.

To speed up the cooking process you can switch the cooking method for this baked oxtail recipe: Do it in a pressure cooker adjusting the time (it should take about 45 minutes over medium heat).
