Background of the Dish

This delicious watermelon mint gazpacho is a fruity version of the traditional Andalusian gazpacho, which only calls for ingredients like tomatoes, garlic, olive oil, and onion.

The watermelon mint gazpacho wasn’t the first cold soup to differentiate from the original recipe, as the gazpacho verde was the first disruptive one, but it was the one that brought a refreshing and fruity twist to the traditional concept.

Besides that fruity flavor, this amazing cold soup offers a vibrant and visually appealing presentation, with its bright red hue and flecks of green mint leaves.

Substitution of Ingredients

Something that we love about Spanish soup recipes is that no matter how easy or complex they are, you will always have some room to make ingredient substitutions.

For this cold watermelon mint soup, the first change that you can follow is to replace the red wine vinegar with balsamic vinegar for a slightly sweeter and more complex flavor profile.

Do you want to make the watermelon mint gazpacho spicier? Then add cayenne pepper, chili flakes, and a small amount of diced jalapeño or serrano pepper and blend it in.

Besides that, you could use a smaller watermelon, and mix this recipe with other fruity Spanish soups recipes like the strawberry gazpacho and the cherry gazpacho.

For a creamier texture in this watermelon soup with mint, you can blend in a small amount of Greek yogurt, sour cream, or coconut milk (which will add sweetness too).

If you want to reach that creamy texture but follow a vegan diet, then copy other Spanish cold soups like the cucumber avocado gazpacho and add one cubed avocado to the mix for the soup.

Tips on Serving Watermelon Mint Gazpacho

Although the main ingredient of this Spanish watermelon gazpacho is a fruit, this dish is usually served as an appetizer for lunch or dinner, or as an extra refreshing afternoon snack.

Went it comes to the toppings for this watermelon mint gazpacho, you can go the traditional route and top it with chopped watermelon, cucumber, and clean mint leaves.

For a different approach, draw inspiration from the bacon tomato soup and top it with fried bacon bits, or for a vegan alternative do like the avocado tomato soup and top it with cubed avocado.

If you have guests coming over for a summer lunch or dinner, you can prepare a table of appetizers filled with other fruity Spanish soups, such as the cantaloupe gazpacho, cold melon soup or chilled blackberry soup.

How to Store Watermelon Mint Gazpacho

How to Store Watermelon Mint Gazpacho. Ingredients and plastic containers in a fridge.

We have some great news for you: if you have some watermelon mint gazpacho left over or you simply want to enjoy it later, then you can store it in your fridge.

Once you finish making the recipe for Spanish soup, place it in a covered container and also cover it with a layer of plastic wrap on contact with the top of the gazpacho so that it doesn’t form a crust.

After that, you can store the Spanish watermelon soup for up to 3 days in the fridge, and it should preserve its original flavor and texture (if something seems off, then it is better to avoid consuming it).

Be sure to adjust the seasoning of the soup and stir it around before serving (you might need to blend it again if the ingredients get separated).

Besides this delicious soup, you have more Andalusian gazpachos that you can make and store for later, such as the cucumber gazpacho recipe, the cold courgette soup, and the Spanish cucumber soup.

Notes

Keep in mind that watermelon gazpacho recipes don't call for water as the primary liquid base; instead, they rely on the juicy goodness of the watermelon itself to provide both hydration and flavor.

If you don't like mint, then you can copy other cold Spanish soups and add alternative herbs such as basil or cilantro for a different flavor profile.

Besides that, you could use a smaller watermelon, and mix this recipe with other fruity Spanish soups recipes like the strawberry gazpacho and the cherry gazpacho.
