Legend has it that a housewife was making bread, but it didn’t rise properly, ending up like a flatbread.

To fix it, she added different toppings and transformed them into a new dish.

This was originally a sweet dish in other parts of Spain since they put a lot of sugar on top, but the Andalusian version is a savory dish served with different vegetables.

To make this Spanish pizza recipe you will need flour, water, yeast, salt, olive oil, and vegetables for the toppings.

As well as other Spanish food recipes, you don’t need any fancy equipment: just an oven, bowl, and baking tray.

Ingredients

  • For the toppings
  • 1 zucchini
  • 1 eggplant
  • 2 tomatoes
  • 1 spring onion
  • ½ green bell pepper
  • ½ red bell pepper
  • 1/2 cup (100ml) tomato sauce
  • Pitted black olives (optional)
  • 1 teaspoon oregano (optional)
  • 3 tablespoon olive oil
  • For the dough
  • 2 3/4 cups (350 gr) all-purpose flour
  • 7 gr fresh yeast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup (240ml) water

How to Make Spanish Pizza Recipe – Step by Step Guide

  1. The first step for the Spanish pizza recipe is making the dough. You have to sift the flour into a bowl, add the teaspoon of salt, and stir, leaving a hole in the center.
  1. Heat the water until it is lukewarm, dissolve the yeast, and add the mixture to the center of the “volcano” of flour.
  1. Now stir it with a spoon, and when you have a dense dough, start kneading it. If it sticks to your hand, let it sit for at least five minutes, or add some flour to your hands.
  1. Make a ball, leave it in a bowl resting between half an hour and an hour covered with a damp cloth or plastic wrap and, when it doubles in size, take it out, cut it in two, and knead it in a rectangular shape until you have the homemade coca dough. Let it rest for 15 minutes.
  1. In the periods in which the dough is resting, prepare the vegetables. You have to cut the zucchini and eggplant into slices first. Drain it in water to remove the bitter taste.
  1. After that, cut the spring onion and the bell peppers. Finally cut the tomato slices.
  1. When the dough has already gone through the rest times, put the oil first and then the tomato sauce on them. Remember that with this amount of ingredients, you will have two good-sized rectangles.
  1. Now throw all the vegetables on top of the dough, in the order you want (better if you alternate randomly). You can put a drizzle of oil on top of them, and season them with salt.
  1. Preheat the oven to 180°C for 10 minutes.
  1. Next, cook the coca bread for 30 minutes at 180°C. At this moment, you can optionally add the cut olives and cook for another 5 minutes.
  1. For the final step, take it out of the oven, make sure it is cooked (otherwise leave it a little longer, checking until ready), and serve the coca pizza warm.

We truly believe that this is one of the best Spanish food because it lets you make as many replacements as you want.

For the dough of the Spanish coca, you could use any type of flour, or even use premade dough.

When it comes to vegetables, we recommend using the ones listed but feel free to add more or less according to your taste, you could even prepare the fried cauliflower recipe and use it as a topping.

This is more of a tomato pizza because it doesn’t have cheese, but you could add cheese as a topping if you want to.

Olive oil is key for reaching the traditional Spanish flavors, but you could use any type of vegetable oil.

Notes

Even though this is a classic Spanish pizza with tomatoes, some people skip them or avoid using tomato sauce, and you can do the same. 

With the number of ingredients listed for the dough, you will have two medium-sized Spanish flatbreads, or one large.

You can play with the ingredients for the Spanish flatbread, using any vegetables of your choice, and we recommend the pitted black olives because they give the right Mediterranean flavor.
