To prepare the padron peppers recipe you only need padron peppers, salt, and olive oil (no tricks, that’s all you need).

The original recipe (and the one in this article) is made by frying the peppers, but you can do it like other pimento pepper recipes and cook them on a grill or in the oven.

  • 1/2 cup (120ml) olive oil
  • 2 tablespoons coarse salt

  1. The first step in this pimento peppers recipe is to wash the padron peppers and dry them with kitchen paper. Make sure they are completely dry because otherwise, the water will make the oil pop.
  1. After that, put the olive oil in a pan, and heat it on high heat.
  1. When the oil is hot, add the padron peppers (lower the heat to medium).
  1. For the next step in this padron peppers recipe, cook them until they are golden on all sides, for that you have to flip them halfway through. It should take up to 5 minutes in total.

However, you still can make them. For example, you can use any type of pimientos peppers: jalapeño, poblano, and bell pepper (takes longer to cook).

You can reduce the amount of salt that you use, but we don’t recommend adding other seasonings since the padron pepper already takes on that job.

Notes

You don't have to add more seasoning because the salted pepper just needs coarse salt.

Keep in mind that padrón peppers come with different levels of spiciness and you won't know what you'll get until you try them, so don't add pepper or other hot seasonings.

Another way of cooking these blistered peppers is by grilling them (from 7 to 10 minutes in total) or in the oven (10 to 15 minutes at high temperature).
