  • 8 cups (2l) beef broth
  • 1.5kg oxtails
  • 4 tablespoons olive oil
  • 2 onions
  • 2 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili flakes
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
