  • 2 cups (400gr) cooked and chilled jasmine rice (preferably a day old)
  • 1kg oxtail
  • 3 carrots
  • 1 cup (150gr) frozen peas
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 cup (150gr) chopped green onions (white and green parts separated)
  • 4 garlic cloves
  • 3 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon sesame oil
  • 3 tablespoons vegetable oil
  • Salt and pepper to taste

How to Make Oxtail Fried Rice – Step by Step Guide

  1. For the first step in this oxtail fried rice recipe, pat the oxtail dry with kitchen paper and cut it into bite-sized pieces. Season each side with salt and pepper, and set them aside.
  1. After that, grab a large pot and heat 2 tablespoons of vegetable oil over medium-high heat. Sear the oxtail pieces on all sides until it gets a beautiful golden color.
  1. After that, add enough water to cover the oxtail and reduce heat to low, then cover and simmer until the oxtail is tender. This should take from 1 to 1.5 hours, as the oxtail is cut into small pieces. Once the meat is cooked, shred it from the bones and set aside.
